When the surf gets heavier or bigger than average you're going to need a board that you can ride with confidence.Built a little extra foam in the right places a good Step Up Surfboard is going to allow you to get into the waves a little easier, handle the extra speed and still be able to perform. Larger hollower waves are generally going to be easier to tackle on a Step Up with a more performance orientated shortboard outline whilst for slower large rolling waves you could comfortably use a more mid-length template style of board and cruise them out.
